Yummy treats for morning tea




Lemon (or orange) cupcakes:

Rind of 3-4 lemon (or oranges)
1 cup of lemon (or orange) juice
1 egg
1 cup of sugar
75 grams of melted butter (or oil)
2 cups of self-raising flour
(Makes 12 muffins or 16 cupcakes)
Beat egg with a whisk, add sugar, melted butter, rind and juice, combine.
Add sifted flour add mix until just combined.
Bake at 190 degrees for 10-12 minutes (until they spring back when touched)
Make a cream cheese or basic icing, add the rind of 1 lemon or orange.
